Recipe: Makes 1 x 8" cake
3 eggs (I used large eggs)
1 tsp Vanilla (5ml)
Pinch of salt
1 cup granulated sugar (200g)
1/2 cup vegetable oil (125ml)
1 3/4 cup cake flour (265g) - you can use all-purpose but cake flour is preferable
1/2 Tbsp Baking powder
3/4 cup milk (175ml)
Bake 165 c for 40 mins
NOTES:
- Using baking strips or damp towels will prevent the cake from staying raw in the middle, having burnt edges, or forming domes.
- You can use melted butter but note that the texture will be denser when compared with oil-based cakes
