Ingredients:
115 g unsalted butter
100 g light brown sugar
100 g granulated sugar
1 large egg
5 mL pure vanilla extract
180 g all-purpose flour
8 g cornstarch
2 g baking soda
2 g salt (I used kosher)
240 g chocolate chips (I used semi-sweet)
1. Cream butter with both sugars
2. Beat in egg and vanilla
3. In a separate bowl, mix dry ingredients and add to sugars, butter, egg, and vanilla
4. Mix until just incorporate and then stir in chocolate chips
5. Roll cookie dough into 2 Tbsp balls (for about 24 cookies)
6. Chill cookie dough in the fridge for at least an hour
7. Space cookie dough 3 inches apart and bake in a 325 F oven for about 18 minutes (check at 15 minutes) or until golden brown around the edges
8. Let cool on the cookie sheet, on a wire rack before storing in an airtight container.
If baking cookie dough from frozen, allow thawing at room temperature for 20 minutes.
